Oatmeal Cranberry Raisin Cookies
2 cups applesauce
1 cup packed brown sugar
½ cup Stevia
2 eggs
1 teaspoon vanilla
1 ½ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon cinnamon
½ teaspoon salt (optional)
3 cups oatmeal oats
¾ cup raisins
¾ cup cranberries
- Preheat oven to 350 degrees
- Combine applesauce, brown sugar, sugar; beat until creamy
- Add eggs and vanilla, beat well
- Combine flour, baking soda, cinnamon, salt in separate bowl
- Add dry mixture to wet and mix well
- If mixture seems too wet, add in extra flour slowly until it thickens slightly
- Add oatmeal, raisins, and cranberries; mix well
- Drop rounded teaspoons onto ungreased cookie sheet
- Bake 10-12 minutes, cool 1 minute before moving cookies from sheet
**to make cookie bars- bake all mix in a 13×9 ungreased pan for 30-35 minutes
